Overnight Bircher Muesli with Grated Apple, Pecans and Raspberries
Inspired by techniques from NYT Cooking and America's Test Kitchen.
Rolled oats soak overnight in milk and yoghurt with grated apple, pecans and dried fruit, then are topped with raspberries and apple slices.
Always check the labels of the products you use.
Method
- 1
Mix. Stir the oats, milk, yoghurt, grated apple with its juice, pecans, raisins and cranberries together in the bowl. Grating the apple with its skin adds fibre, and its juice sweetens the mixture.
- 2
Soak. Cover and refrigerate for at least 1 hour, ideally overnight, until the oats are soft and creamy.
- 3
Loosen. Stir well and add a splash of milk if it has become too thick.
- 4
Serve. Spoon into 4 bowls and top with the raspberries and apple slices.
Storage
Keep covered in the fridge for up to 3 days. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
