Method

  1. 1

Dressing. Stir together 35 ml mayonnaise, 30 ml soured cream, 20 ml ketchup, 1 tbsp chopped pickle, 1 tbsp lemon juice and 1 tsp horseradish, then season with pepper.

  2. 2

Warm. Oven 180°C, wrap the 450 g corned beef with 2 tbsp water in foil and heat for 10 min.

  3. 3

Sauerkraut. Melt 15 g butter in a small pan and cook the sauerkraut until the liquid evaporates and it turns glossy, about 5 min.

  4. 4

Toast. Melt 30 g butter in the large pan and toast 4 bread slices on one side until golden, about 4 min.

  5. 5

Assemble. Spread dressing on all 8 slices, pile the drained beef, sauerkraut and cheese onto the toasted slices, then close with the untoasted slices.

  6. 6

Grill. Melt the remaining 25 g butter, add the sandwiches and press with a smaller lid until the cheese melts, about 2 min, then uncover, turn the sandwiches and press until the second side is crisp, about 3 min.

  7. 7

Serve. Halve diagonally and serve hot.

Storage

Best eaten hot and freshly made; reheat any leftover beef until piping hot (74°C) before rebuilding the sandwich. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).

EU nutrition claims

  • Source of protein: 4.6 g protein per 100 kcal, about 18% of energy (needs ≥ 12%)
  • Low sugars: 2.2 g sugars per 100 g (limit ≤ 5 g)

Per 100 g of the finished dish, worked out from the nutrition per serving and the lowest likely cooked weight (about 238 g a serving), so the true values are, if anything, lower. Thresholds from the Annex to EU Regulation (EC) No 1924/2006. How we decide
