Method

  1. 1

Soak. Cover the peas with water and soak 30-60 min.

  2. 2

Skin. Pulse the peas with fresh water in the blender in short bursts just to crack them, tip into the bowl, swish and pour off the floating skins; repeat until almost all are skinless.

  3. 3

Blend. Blend the skinned peas with the onion, pepper, chilli, stock and salt 3-4 min until completely smooth, then whisk in the oil.

  4. 4

Fill. Grease the ramekins, half-fill with batter, add a piece of egg to each, top up and cover tightly with foil.

  5. 5

Steam. Set on the rack in the pan with 2 cm simmering water, cover and steam 45-60 min, topping up the water, until firm, a skewer comes out clean and the centre reads at least 74 °C.

  6. 6

Serve. Rest 5 min, then turn out or serve in the ramekins.

Storage

Keep covered in the fridge for up to 3 days; re-steam until piping hot. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).

EU nutrition claims

  • Source of protein: 4.3 g protein per 100 kcal, about 17% of energy (needs ≥ 12%)
  • Source of fibre: 1.7 g fibre per 100 kcal (needs ≥ 1.5 g)

Per 100 g of the finished dish, worked out from the nutrition per serving and the lowest likely cooked weight (about 44 g a serving), so the true values are, if anything, lower. Thresholds from the Annex to EU Regulation (EC) No 1924/2006. How we decide
