No-Churn Vanilla Ice Cream Pie
Inspired by techniques from King Arthur Baking.
A digestive biscuit or graham cracker crust holds a whipped, no-churn vanilla filling made from just cream, condensed milk and vanilla, so it sets up soft and scoopable straight from the freezer with no ice cream maker needed. It's a make-ahead pie that only gets easier the longer it sits in the freezer.

Method
- 1
Make the crust. In a medium bowl, mix the biscuit crumbs, sugar and melted butter until every crumb is moistened and the mixture looks like damp sand. Press it firmly into the bottom of a lightly greased 23 cm springform tin or pie dish with your fingers, then chill it in the fridge while you make the filling.
- 2
Whip the filling. In a stand mixer fitted with the whisk attachment, beat the double cream, sweetened condensed milk, alcohol-free vanilla extract and salt on medium speed until stiff peaks form.
- 3
Fill and freeze. Scrape the filling into the chilled crust and smooth the top. Freeze until firm, about 6 hours.
- 4
Serve. Let the pie stand at room temperature for 5-10 minutes to soften slightly before slicing.
Storage
Wrap leftover pie tightly in cling film and freeze for up to 1 week.
