Method

  1. 1

Batter. Whisk the chickpea flour and salt in the bowl, then add the water a little at a time, whisking until thin and lump-free.

  2. 2

Rest. Cover and leave at room temperature 4-8 h so the flour fully hydrates.

  3. 3

Heat. Put the empty pan on a rack about 15 cm under the grill and heat the oven grill (broiler) on full for 15 min.

  4. 4

Pour. Skim off any foam from the batter. Carefully take out the pan, add the oil and swirl, then pour in the batter, stir once so the oil streaks through, and scatter with pepper and rosemary.

  5. 5

Bake. Grill 11-15 min until set all the way through and blistered with brown freckles.

  6. 6

Serve. Rest 10 min in the pan, then slide out and cut into wedges.

Storage

Best fresh; keep leftovers covered in the fridge for 1 day and reheat in a hot pan. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).

EU nutrition claims

  • Source of protein: 3.7 g protein per 100 kcal, about 15% of energy (needs ≥ 12%)
  • Source of fibre: 1.8 g fibre per 100 kcal (needs ≥ 1.5 g)

Per 100 g of the finished dish, worked out from the nutrition per serving and the lowest likely cooked weight (about 40 g a serving), so the true values are, if anything, lower. Thresholds from the Annex to EU Regulation (EC) No 1924/2006. How we decide
