Thick Açaí Bowl with Banana, Berries and Granola
Inspired by techniques from NYT Cooking and America's Test Kitchen.
Frozen unsweetened açaí is blended with frozen banana and berries into a thick, spoonable base, then topped with banana, strawberries, blueberries and granola.
Always check the labels of the products you use.
Method
- 1
Blend. Pour the milk into the blender first so the blades catch, then add the açaí, frozen banana, berries and honey. Blend on low, pressing down with the tamper and stopping to scrape down as needed, until thick and smooth like soft-serve. Add more milk only a spoonful at a time, or the bowl will turn runny.
- 2
Top and serve. Spoon the mixture into the chilled bowls and arrange the banana, strawberries, blueberries and granola in rows on top. Eat straight away, before it melts.
Storage
Best eaten straight away. The blended base can be frozen in a lidded tub for up to 1 month; soften for 10 minutes before serving. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
