Method

  1. 1

Mash. Boil the diced potato in salted water until tender, drain and mash with 1 tbsp olive oil.

  2. 2

Heat. Heat the frying oil in a deep pan to 175°C.

  3. 3

Fill. Lay a wrapper on a saucer, spoon 3 tbsp mashed potato into the centre and press a hollow in it, then dab with harissa if using and scatter over the capers and parsley.

  4. 4

Crack. Crack an egg into the hollow, fold one corner of the wrapper over to the opposite corner to enclose the filling and egg in a triangle, and press the edges to seal.

  5. 5

Fry. Slide the parcel into the oil away from you and fry for about 1 minute until golden underneath, then flip and fry for about 1 minute more, longer if a set yolk is wanted.

  6. 6

Repeat. Lift out, drain briefly, then make the remaining parcels one at a time.

  7. 7

Serve. Serve hot with lemon wedges.

Storage

Best eaten straight from the pan while hot and crisp; not suitable for keeping or reheating. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).

EU nutrition claims

  • Source of protein: 3.8 g protein per 100 kcal, about 15% of energy (needs ≥ 12%)
  • Low sugars: 1.3 g sugars per 100 g (limit ≤ 5 g)

Per 100 g of the finished dish, worked out from the nutrition per serving and the lowest likely cooked weight (about 69 g a serving), so the true values are, if anything, lower. Thresholds from the Annex to EU Regulation (EC) No 1924/2006. How we decide
