Whipped Dalgona Coffee over Cold Milk
Inspired by techniques from Serious Eats and NYT Cooking.
Instant coffee, sugar and hot water are whisked into a stiff, glossy foam and spooned over glasses of iced whole milk.
Always check the labels of the products you use.
Method
- 1
Whip. Put the instant coffee, sugar and hot water in the bowl. Whisk vigorously by hand for 6-8 minutes, or 2-3 minutes with the mixer, until thick, glossy, pale caramel and holding soft peaks.
- 2
Fill the glasses. Put a few ice cubes in each glass and pour in 240 ml cold milk.
- 3
Top. Spoon a quarter of the whipped coffee onto each glass, swirling it into a mound.
- 4
Serve. Serve straight away with a spoon, and stir the coffee into the milk before drinking.
Storage
The whipped coffee keeps covered in the fridge for up to 1 day; assemble just before serving. Cool leftovers in a shallow container and refrigerate within 2 hours (within 1 hour on a day above 32°C).
EU nutrition claims
- Source of protein: 4.3 g protein per 100 kcal, about 17% of energy (needs ≥ 12%)
- Low salt: 0.12 g salt per 100 ml (limit ≤ 0.3 g)
Per 100 ml of the finished dish, worked out from the nutrition per serving and the lowest likely cooked weight (about 219 ml a serving), so the true values are, if anything, lower. Thresholds from the Annex to EU Regulation (EC) No 1924/2006. How we decide
Caffeine · Free sugars
- Per serving: about 110 mg caffeine (serving: 1 glass (3.5 g instant coffee)). Source: 3.5 g instant coffee × USDA FDC SR Legacy #171893 (instant coffee powder, 3140 mg/100 g; 1 tsp = 1 g).
- Scaling: making more servings does not change the caffeine in each serving; what counts is how many servings you drink in a day. 1 serving: 110 mg · 2 servings: 220 mg (above EFSA 200 mg at once) · 3 servings: 330 mg (above EFSA 200 mg at once) · 4 servings: 440 mg (above EFSA 400 mg a day).
- General guideline: EFSA Scientific Opinion on the safety of caffeine (2015): for healthy adults, up to 200 mg in a single dose and up to 400 mg per day do not raise safety concerns. 1 serving = 28 % of 400 mg. EFSA
