Falafel
Falafel are deep-fried patties or balls of ground chickpeas bound with herbs and spices, eaten across the Levant tucked into pita, piled over salad, or as part of a mezze spread. Starting from raw, soaked chickpeas rather than canned or cooked ones is what gives them their light, craggy interior under a deep brown, crisp crust.
